Ingredients
  

Vegetables

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces

Spices and Oil

  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper

Protein

  • 1 package chicken sausage (12 oz), robust Italian flavor recommended

Instructions
 

Preparation

  • Chop the veggies and add them to a large bowl. Drizzle them with avocado oil and toss to coat.
  • In a smaller bowl, mix the spices together with the salt and pepper, then add the spice blend to the veggies. Toss to coat.
  • Slice the sausage into 3/4 inch rounds and add it to the bowl with the veggies. Toss everything together.

Cooking

  • Preheat the air fryer to 390°F (if needed) and spray the air fryer basket with cooking spray.
  • Add the veggies and sausage to the air fryer basket in an even layer. Cook for 10 minutes, flipping them halfway through.
  • Once done cooking, remove the chicken sausage and veggies from the air fryer. Serve as is or over brown rice or cauliflower rice.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the air fryer or microwave. Consider mixing and matching vegetables or adjusting spices to taste.
