A quick and nutritious dish of chicken sausage paired with fresh vegetables, all cooked to perfection in just 10 minutes using an air fryer.

Ingredients
  

Vegetables

  • 1 large red bell pepper – cut into 1-inch pieces
  • 1 large orange bell pepper – cut into 1-inch pieces
  • 1 large red onion – peeled and cut into 1-inch pieces
  • 1 medium zucchini – cut into 1-inch pieces

Spices and Oil

  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • a pinch black pepper

Protein

  • 1 package chicken sausage (12 oz) Robust Italian flavor

Instructions
 

Preparation

  • Chop the veggies and add them to a large bowl. Drizzle them with avocado oil and toss to coat.
  • In a smaller bowl, mix together the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Add this spice blend to the veggies, tossing until everything is well-coated.
  • Slice the chicken sausage into 3/4 inch rounds and add it to the bowl with the veggies. Mix everything together.
  • Preheat the air fryer to 390 degrees F and spray the basket with cooking spray.

Cooking

  • Add the veggies and sausage to the air fryer basket in an even layer.
  • Cook for 10 minutes, flipping them halfway through the cooking time. You may need to do this in batches, depending on the size of your air fryer.
  • Once done, remove the chicken sausage and veggies from the air fryer and serve them as is or with cooked cauliflower rice or brown rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the air fryer or microwave. Cut veggies into similar sizes for even cooking. Add red pepper flakes for spiciness. Experiment with different veggies like broccoli or asparagus.
