  • 1 medium eggplant Choose firm and heavy eggplants for best texture.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • optional Grated Parmesan cheese or herbs for topping Sprinkle over the eggplant during the last few minutes of cooking.

Preparation

  • Wash the eggplant thoroughly and cut it into thin slices, about 1/4 inch thick.
  • In a large bowl, mix the olive oil, garlic powder, paprika, salt, and pepper together.
  • Add the eggplant slices to the bowl and toss until each slice is well-coated with the oil and spice mixture.

Cooking

  • Preheat the air fryer to 380°F (193°C).
  • Arrange the eggplant slices in a single layer in the air fryer basket, ensuring not to overcrowd.
  • Cook for 10-12 minutes, flipping the slices halfway through until they are crispy and golden-brown.
  • If desired, sprinkle grated Parmesan cheese or herbs over the eggplant during the last 2 minutes of cooking.

Notes

To store leftovers, allow to cool completely and place in an airtight container. Keep in the refrigerator for up to 3 days. Reheat in the air fryer for best results. For added flavor, try soaking sliced eggplant in salt water for 30 minutes before cooking.
