Ingredients
  

For the Sauce

  • 1 cup milk of choice
  • 1/2 cup cottage cheese
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt (more or less to taste)
  • 1/8 teaspoon freshly cracked black pepper (more or less to taste)
  • 1/4 teaspoon garlic powder (plus more to taste)
  • 1/2 cup grated fresh parmesan or fresh romano
  • Dried basil (to taste)
  • Dried oregano (to taste)

To Serve

  • Prepared pasta (any type, any amount)
  • Prepared meat of choice
  • Prepared vegetables of choice
  • Chopped fresh parsley

Instructions
 

Preparation

  • Add milk, cottage cheese, cornstarch, salt, black pepper, garlic powder, and parmesan to a blender. Blend until smooth, scraping down the sides as needed.
  • Transfer the mixture to a small saucepan. Stir in desired amounts of dried basil and oregano and heat over medium-low, stirring frequently until heated through.
  • Taste and adjust seasoning with salt, pepper, basil, and oregano.
  • Reduce heat to low and simmer for approximately 5 minutes, stirring occasionally, until slightly thickened.
  • Toss prepared pasta in the sauce for 2-3 minutes, then serve on plates or bowls.
  • Top with prepared meat or vegetables and garnish with chopped parsley before serving.

Notes

Blend well to avoid lumps and adjust flavors as desired. For a fresh taste, consider using fresh herbs instead of dried. This sauce can be easily made vegan by substituting cottage cheese and parmesan with dairy-free alternatives.
