Croissant Ingredients

  • 4 pieces croissants, day old Use day-old croissants for best texture.

Almond Syrup

  • 1 cup sugar
  • 2 tablespoons sugar Additional sugar for the syrup.
  • 1/4 cup water
  • 1 tablespoon water Additional water for the syrup.
  • 2 tablespoons almond flour Or almond meal.
  • 1/4 teaspoon almond extract Optional.

Almond Cream

  • 2 cups almond cream, cold
  • 1 cup almond flour Or almond meal.
  • 1 1/2 tablespoons almond flour
  • 1 tablespoon all-purpose flour
  • 1 teaspoon all-purpose flour Additional flour for the almond cream.
  • 1/2 cup unsalted butter At room temperature (4.4 ounces).
  • 1 cup powdered sugar
  • 1 1/2 tablespoons powdered sugar Additional powdered sugar for the almond cream.
  • 1/4 cup eggs
  • 2 teaspoons eggs Additional eggs for the cream.

Toppings

  • 1/2 cup sliced almonds For dipping the tops.
  • 1/2 cup powdered sugar For dusting.

Instructions
 

Make Almond Syrup

  • Combine sugar, water, and almond flour in a small saucepan.
  • Simmer over medium heat until the sugar dissolves.
  • Remove from heat, steep for 1 hour, strain, and add almond extract (if using).

Prepare Almond Cream

  • Sift almond flour and all-purpose flour into a bowl.
  • Cream the butter in a mixer until it reaches a mayonnaise consistency.
  • Add the sifted powdered sugar and mix until fluffy.
  • Gradually add the almond mixture and eggs, mixing until smooth.
  • Refrigerate for at least 2 hours.

Assemble Croissants

  • Preheat the oven to 350°F.
  • Line a sheet pan with parchment paper.
  • Cut the croissants horizontally and brush the cut sides with almond syrup.
  • Pipe almond cream onto the bottom half, then replace the top half and pipe more almond cream on top.
  • Dip the tops into sliced almonds, pressing to compact.
  • Arrange on the baking sheet and bake for 15-20 minutes until the almonds are golden brown.
  • Allow to cool on a rack before serving.

Notes

Serve the almond croissants warm or at room temperature. Dust them with powdered sugar just before serving for an extra touch of sweetness. They pair well with coffee or tea.
