  • 1 pound breakfast sausage
  • 30 oz frozen hash browns
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • to taste Salt and pepper
  • 1 cup diced bell peppers (optional)
  • 1 cup diced onions (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the breakfast sausage over medium heat for about 5-7 minutes until it’s no longer pink in the center. Drain excess fat.
  • In a large bowl, combine the cooked sausage, frozen hash browns, eggs, milk, salt, pepper, and optional diced bell peppers and onions. Stir until well combined.
  • Pour the mixture into a greased 9x13 inch baking dish and spread it evenly.
  • Sprinkle shredded cheddar cheese generously on top.

Baking

  • Place the dish in the preheated oven and bake for 45-50 minutes, or until the casserole is set and the top is golden brown.
  • Allow the casserole to cool for a few minutes before slicing into squares to serve.

Notes

Serve hot with fresh herbs, fruit, or salad. For an extra kick, top with sour cream or hot sauce. Leftovers can be stored for up to 4 days in the fridge and up to 3 months in the freezer.
