  • 1 lb ground beef
  • 1 cup onion, chopped
  • 1 cup mushrooms, sliced
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 1 cup frozen mixed vegetables
  • to taste Salt and pepper
  • 1 cup shredded cheddar cheese

For Serving

  • as needed Biscuits or mashed potatoes

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add the chopped onion and sliced mushrooms; cook until tender.
  • Stir in the cream of mushroom soup, beef broth, frozen mixed vegetables, salt, and pepper. Mix well.
  • Transfer the mixture to a greased baking dish and bake in the preheated oven for 30 minutes.
  • Remove from the oven and sprinkle with shredded cheddar cheese.
  • Return to the oven and bake for an additional 10 minutes, until the cheese is melted and bubbly.

Notes

Feel free to add other vegetables like bell peppers or green beans for extra flavor and nutrition. Can substitute ground beef with ground turkey or chicken for a lighter version.
