Ingredients
  

For the batter

  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp kosher salt
  • 2 tsp cinnamon
  • 0.25 cup unsalted butter melted
  • 0.25 cup granulated sugar
  • 1 large egg
  • 0.5 tsp vanilla extract
  • 0.5 cup no-sugar-added applesauce
  • 1.5 cups peeled and finely diced Honeycrisp apples

For the glaze

  • 2 cups powdered sugar
  • 1/3 cup apple cider or apple juice plus 2 tablespoons

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and spray a baking sheet with cooking spray.
  • In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
  • In a large bowl, whisk the melted butter and sugar. Then add the egg, vanilla, and applesauce.
  • Stir in the flour mixture and fold in the chopped apples.
  • Scoop 1 tablespoon of batter onto the prepared baking sheet and bake for 10 minutes.

Glazing

  • For the glaze, whisk together the powdered sugar and apple cider until thin.
  • Brush the glaze over each fritter and broil for 2-4 minutes, rotating the baking sheet for even caramelization.
  • Brush remaining glaze on and let set for about 15 minutes.

Notes

Serve warm or at room temperature. Pair with coffee, tea, or hot chocolate. For extra sweetness, serve with vanilla ice cream. Ensure apples are chopped finely for better mixing.
