  • 2 packs instant ramen noodles
  • 200 g mushrooms, sliced Use shiitake, button, or cremini for extra flavor.
  • 2 tablespoons soy sauce Adjust to taste for saltiness.
  • 1 tablespoon sesame oil
  • 2 cups vegetable broth Vegan-friendly if desired.
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 piece green onion, chopped

Optional Garnish

  • to taste sesame seeds For garnish.

Cooking

  • In a pan, heat sesame oil over medium heat.
  • Add the sliced mushrooms, garlic, and ginger; sauté until mushrooms are golden brown.
  • Pour in soy sauce and vegetable broth, bringing it to a simmer.
  • Add the instant ramen noodles and cook according to package instructions until tender.
  • Serve hot, garnished with chopped green onions and sesame seeds if desired.

Notes

If you have leftovers, let the noodles cool and store them in an airtight container in the fridge for about 2 days. Reheat with a splash of water or broth to avoid drying out.
