  • 1 pound beef sirloin, cut into cubes
  • 2 cups baby potatoes, halved
  • 3 tablespoons soy sauce Can substitute with tamari for gluten-free
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Cooking

  • Heat olive oil in a large skillet over medium-high heat until it shimmers.
  • Add the beef cubes to the skillet and season with salt and pepper. Sear for about 4-5 minutes, allowing the beef to brown evenly.
  • Add the halved potatoes to the skillet and cook for an additional 10 minutes, stirring occasionally.
  • In a small bowl, mix the soy sauce and minced garlic together.
  • Pour the soy sauce mixture over the beef and potatoes, adding the butter. Stir to combine.
  • Cook for another 2-3 minutes until everything is well coated and the sauce thickens slightly.
  • Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for up to 3 months. To reheat, use stovetop or microwave.
