Asparagus Lemon Pasta

Ingredients
  

Pasta & Vegetables

  • 8 oz pasta of choice
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces

Flavorings

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon zested and juiced
  • to taste Salt and pepper

Toppings

  • Parmesan cheese, for serving
  • Fresh parsley, chopped (optional)

Instructions
 

Cooking Pasta

  • Cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Cooking Asparagus

  • In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  • Add the asparagus pieces to the skillet. Cook for about 5 minutes, stirring occasionally, until they are tender but still crisp.

Combining Ingredients

  • Stir in the cooked pasta, along with the lemon zest and lemon juice. Mix well to combine.
  • Season with salt and pepper to taste.
  • Serve hot, topped with freshly grated Parmesan cheese and parsley if desired.

Notes

For best results, serve hot. This dish can also be enjoyed as a chilled salad. Store leftovers in an airtight container for up to 3 days, or freeze for 2-3 months.
