  • 200 g feta cheese Crumble before use
  • 2 cups cherry tomatoes Use ripe tomatoes for best flavor

  • 1 teaspoon dried oregano

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, place the cherry tomatoes and drizzle with olive oil, then toss to coat.
  • Crumble the feta cheese over the tomatoes.
  • Create small wells in the mixture and crack an egg into each well.
  • Season with salt, pepper, and oregano.

Cooking

  • Bake for 15-20 minutes, or until the eggs are set to your liking.
  • Remove from the oven, add fresh spinach on top, and return to the oven for an additional 2-3 minutes.
  • Garnish with fresh parsley if desired and serve warm.

Notes
