  • 4 large eggs
  • 200 g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups spinach Washed and dried
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a baking dish, combine the cherry tomatoes and spinach. Drizzle with olive oil and sprinkle with salt and pepper.
  • Crumble the feta cheese over the mixture.
  • Make small wells in the mixture and crack an egg into each well.

Cooking

  • Place the dish in the oven and bake for 20-25 minutes, until the egg whites are set but the yolks are still slightly jiggly.

Serving

  • Garnish with fresh herbs if desired. Serve hot.

Notes

Great for meal prep and can be served with crusty bread or mixed greens. Use leftovers as a filling for wraps or sandwiches. Freezing individual portions is also an option.
