Ingredients
  

For the Donuts

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk Or substitute with milk and vinegar.
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 tbsp lemon zest
  • 1/2 cup blueberries Use fresh blueberries.

For the Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice Adjust for desired consistency.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a donut pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, eggs, melted butter, and lemon zest.
  • Combine the wet and dry ingredients until just mixed. Gently fold in the blueberries.
  • Fill each donut mold about 2/3 full with batter.

Baking

  • Bake for 10-12 minutes, or until a toothpick comes out clean.
  • Let cool in the pan for a few minutes before transferring to a wire rack.

Glazing

  • For the glaze, mix the powdered sugar with lemon juice until smooth.
  • Dip the tops of the cooled donuts into the glaze and let set before serving.

Notes

Best enjoyed fresh and warm. Can be stored in an airtight container at room temperature for up to 2 days, in the refrigerator for up to a week, or frozen for up to 2 months.
