Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper.
  • Add the chicken to the skillet and cook for 5-7 minutes on each side, or until fully cooked.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add garlic and cook for 1 minute.
  • Add cherry tomatoes and spinach, and sauté until the spinach is wilted.
  • Pour balsamic vinegar over the vegetables and stir to combine.
  • Return the chicken to the skillet and cook for an additional 2 minutes, allowing flavors to meld.

Notes

For added flavor, marinate the chicken in balsamic vinegar for a few hours before cooking. This dish is best served hot, and you can drizzle a little extra balsamic vinegar for additional flavor.
