For the Brownies

  • 3 ripe bananas, mashed Use very ripe bananas for best flavor.
  • 1 cup granulated sugar
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 large eggs Can substitute with 1/4 cup unsweetened applesauce per egg.
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional) Can replace with chocolate chips or other nuts.

For the Frosting

  • 1/2 cup brown butter Melted until golden brown.
  • 1 cup powdered sugar Adjust for consistency.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  • In a large bowl, combine the mashed bananas with sugar and melted butter. Mix well.
  • Beat in the vanilla and eggs until combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in the nuts if using.
  • Pour the batter into the prepared pan and smooth the top.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Frosting Preparation

  • While the brownies are cooling, prepare the brown butter frosting by melting butter in a pan over medium heat until it turns golden brown and smells nutty. Remove from heat and let it cool slightly.
  • Whisk in the powdered sugar until smooth and spreadable.
  • Once brownies are cool, spread the frosting over the top and cut into squares to serve.

Notes

Serve brownies warm or at room temperature. They pair well with vanilla ice cream or whipped cream. Store leftovers in an airtight container at room temperature for up to three days or refrigerate for up to a week. For long-term storage, freeze tightly wrapped for up to three months.
