Ingredients
  

For the Chicken

  • 1 lb Chicken tenderloins
  • 1 cup Panko breadcrumbs Regular breadcrumbs can be used if needed.
  • 1/2 cup Flour Season with salt and pepper for added flavor.
  • 2 large Eggs Use room temperature for better mixing.
  • 1/2 cup Vegetable oil For frying.

For the Bang Bang Sauce

  • 1/2 cup Mayonnaise Use room temperature for better mixing.
  • 1/4 cup Sweet chili sauce
  • 1-2 tbsp Sriracha Adjust to taste for spice.
  • 2 tbsp Lime juice Freshly squeezed preferred.

Preparation

  • In a bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth and creamy, then set aside.
  • Set up your breading station with three separate bowls: one for flour, one for beaten eggs, and one for panko breadcrumbs.

Cooking

  • Coat each chicken tenderloin in flour, dip it into the beaten eggs, then roll it in panko breadcrumbs until thoroughly coated.
  • Heat vegetable oil in a large pan over medium heat until it shimmers.
  • Carefully place the breaded chicken into the hot oil and cook for about 4-5 minutes on each side or until golden brown and crispy.
  • Remove the chicken and let it drain on paper towels.

Serving

  • Drizzle the bang bang sauce over the crispy chicken and serve hot. Garnish with lime wedges or fresh herbs.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to three days, or freeze for up to three months. Reheat in the oven for best results.
