  • 1 cup mixed vegetables (e.g., bell peppers, carrots, cucumbers) Feel free to add other veggies like broccoli or snap peas.

Preparation

  • Cook jasmine rice according to package instructions.
  • In a bowl, mix together mayonnaise, sriracha, honey, and soy sauce to make the spicy mayo drizzle.
  • In a skillet, heat some oil over medium heat. Season chicken pieces with salt and pepper and cook until golden and cooked through, about 5-7 minutes.
  • Prepare your mixed vegetables by chopping them into bite-sized pieces.

Assembly

  • To assemble, serve the cooked jasmine rice in bowls, top with the cooked chicken and mixed vegetables.
