Delicious and easy bang bang salmon bites that are crispy on the outside and tender on the inside, served with a flavorful sauce.

Ingredients
  

For the Salmon Bites

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes) Use fresh salmon for best flavor.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs For coating.
  • 1 tbsp olive oil or spray for crisping Use oil spray for lighter texture.

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha Adjust to spice level.
  • 1 tsp honey (optional)
  • Juice of ½ lime

For Serving

  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado sliced
  • ½ cup shredded carrots
  • 2 green onions sliced
  • Fresh cilantro and sesame seeds for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) or your air fryer to the recommended setting.
  • In a bowl, mix the garlic powder, smoked paprika, salt, and black pepper. Sprinkle this mixture over the salmon cubes and toss to coat them well.
  • Place the panko breadcrumbs in a shallow dish. Take each piece of seasoned salmon and coat it in the panko.

Cooking

  • If using an oven, lay the coated salmon bites on a baking sheet lined with parchment paper. Drizzle olive oil over them. Bake for 12-15 minutes, or until golden brown.
  • If using an air fryer, place the bites in the basket, spray lightly with oil, and cook for about 8-10 minutes.

Making the Sauce

  • In a small bowl, mix the mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice until well combined.

Assembling

  • In bowls, layer cooked jasmine rice or cauliflower rice, shredded purple cabbage, and top with the crispy salmon bites.
  • Add avocado slices, shredded carrots, green onions, and drizzle with the Bang Bang sauce. Garnish with fresh cilantro and sesame seeds.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer for best results.
