For the salmon bites

  • 1 lb salmon fillets, cut into bite-sized pieces
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust for spice level)

Preparation

  • In a bowl, combine the mayonnaise, sweet chili sauce, and sriracha to create your flavorful dipping sauce. Set aside.
  • Season the salmon pieces generously with salt and pepper.
  • Set up your breading station: one bowl for flour, one for beaten egg, and one for breadcrumbs.

Breading and Cooking

  • Dip each salmon piece in the flour, ensuring it’s evenly coated. Dip it into the beaten egg and then coat with breadcrumbs.
  • Heat oil in a pan over medium heat. Once hot, carefully place the salmon bites in the oil, fry until golden and crispy, about 3-4 minutes on each side.
  • Remove the bites from the oil and drain on paper towels.
  • Toss the warm salmon bites in the prepared sauce until evenly coated.
  • Serve immediately, garnished with chopped green onions.

Notes

For best texture, ensure proper oil temperature before frying. If needed, bread the salmon bites in advance and store in the fridge until ready to cook.
