  • 2 slices slices of bread Choose your favorite type of bread.
  • 1 cup cooked chicken, shredded Use leftover or rotisserie chicken for convenience.
  • 1/2 cup BBQ sauce Any brand will do; adjust based on taste preference.
  • 1 cup shredded cheese Cheddar or mozzarella recommended.
  • as needed tbsp Butter For spreading on bread.

Preparation

  • Preheat your skillet over medium heat.
  • In a mixing bowl, combine shredded chicken with BBQ sauce until evenly coated.
  • Spread butter generously on one side of each slice of bread.

Cooking

  • Place one slice of bread, butter side down, onto the skillet.
  • Layer the BBQ chicken mixture evenly over the bread, followed by shredded cheese.
  • Place the second slice of bread on top, butter side facing up.
  • Cook until the bottom slice is golden brown, about 3-5 minutes.
  • Carefully flip the sandwich over and cook for another 3-5 minutes until the other side is golden brown and cheese is melted.
  • Remove the sandwich from the skillet, slice in half, and serve hot.

Notes

For the best flavor, serve hot. Pair with a side of pickles, chips, or a salad. You can use leftovers in salads or as meal prep for lunches.
