  • 2 lbs chicken breast, cut into cubes
  • 1 cup pineapple chunks
  • 1 medium bell pepper, cut into squares
  • 1 medium onion, cut into squares
  • 1/2 cup BBQ sauce
  • 1/2 cup teriyaki sauce
  • as needed Skewers (if wooden, soaked in water)

Preparation

  • In a large bowl, combine the BBQ sauce and teriyaki sauce to create a luscious marinade. Reserve about half of this mixture for basting later.
  • Add the chicken cubes to the marinade, ensuring they’re thoroughly coated. Allow them to marinate for at least 30 minutes.

Grilling

  • Preheat your grill to medium-high heat (about 375°F).
  • Thread the marinated chicken, pineapple chunks, bell pepper squares, and onion onto the skewers, alternating between each ingredient.
  • Place the kabobs on the grill and cook them for 15-20 minutes, turning them occasionally and basting with the reserved marinade until the chicken is cooked through and reaches an internal temperature of 165°F.
  • Serve the skewers warm.

Notes

Marinate chicken overnight for maximum flavor. For gluten-free options, ensure BBQ and teriyaki sauces are gluten-free.
