  • 1 pound ground beef or beef chuck, finely diced You can substitute with ground turkey or chicken for a lighter option.
  • 1 tablespoon olive oil Use for cooking.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper chopped
  • 1 can (14 oz) diced tomatoes Including juice.
  • 2 teaspoons chili powder Available in the spice aisle.
  • 1 teaspoon cumin Available in the spice aisle.
  • to taste salt and pepper Adjust according to preference.
  • as needed Fresh cilantro for garnish Add for flavor and presentation.

Cooking Instructions

  • In a large pan, heat the olive oil over medium-high heat for about 1 minute.
  • Add the ground beef to the pan. Cook for 5-7 minutes until browned, breaking it apart with a spatula until fully cooked.
  • Toss in the diced onion and garlic, stirring every couple of minutes, cooking for about 3-4 minutes until tender and fragrant.
  • Stir in the bell pepper and continue to cook for another 5 minutes until softened.
  • Pour in the diced tomatoes (including juice), chili powder, cumin, salt, and pepper. Let the mixture simmer for 10 minutes, allowing the flavors to meld and thicken slightly.
  • Once everything is well combined and heated through, taste and adjust seasoning with additional salt and pepper as desired.

Notes

Serve this beef dish hot, garnished with cilantro. Pair with warm tortillas, rice, or tortilla chips. Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 3 months.
