  • 2 cups mixed berries (blueberries, raspberries, strawberries) Use fresh berries for best flavor.
  • 1/2 cup sugar Use additional sugar for the filling.

For the cobbler batter

  • 1 cup all-purpose flour Can be substituted with a gluten-free blend.
  • 1 cup sugar Divided into two portions.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk Use almond milk for a vegan option.
  • 1/4 cup butter, melted Consider using browned butter for added flavor.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the mixed berries with 1/2 cup of sugar. Toss gently to coat, then pour the mixture into a buttered baking dish.
  • In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt until well combined.
  • Stir in the milk, melted butter, and vanilla extract until just combined. Avoid overmixing.
  • Pour the batter evenly over the berries.

Baking

  • Bake for 30-35 minutes, or until the top is golden brown and the juices are bubbling.
  • Allow it to cool slightly before serving warm.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 3 days. Freezing is possible; use plastic wrap and aluminum foil for up to 2 months.
