Main Ingredients

  • 4 pieces bone-in pork chops, thick cut (1-2” thick)
  • 1/4 cup brown sugar
  • 2 tbsp paprika
  • 2 tsp kosher salt
  • 2 tsp ground black pepper
  • 2 tsp ground mustard
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tbsp vegetable oil For coating the pork chops

Instructions
 

Preparation

  • Preheat grill with cover closed to medium-high heat (about 400°F) for at least 10 minutes.
  • Pat pork chops dry with paper towels and coat them with vegetable oil.
  • Mix all dry ingredients and apply to both sides and edges of the pork chops.

Grilling

  • Place pork chops on the hot grill and leave them alone for 5-7 minutes, or until they release from the grill grate with little effort.
  • Use tongs to turn pork chops 1/4 turn to create cross grill marks.
  • Continue grilling for 2-3 more minutes for a total of 7-10 minutes on the first side.
  • Flip pork chops and grill the second side for 2-3 minutes, just to sear.
  • When the internal temperature reaches 140°F, remove pork chops from the grill and let them rest on a plate for 5 minutes before serving.

Notes

Serve these grilled pork chops hot off the grill. They pair well with sides like grilled vegetables, mashed potatoes, or a fresh salad. A drizzle of balsamic glaze or a sprinkle of fresh herbs can add a nice touch. Ensure your grill is hot before placing the pork chops on it. Do not flip the pork chops too often. Let them rest after grilling to keep them juicy.
