For the Cake

  • 2 cups grated carrots Use freshly grated for best flavor
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs Make sure they are at room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg

For the Frosting

  • 8 ounces cream cheese, softened At room temperature
  • 1/4 cup butter, softened At room temperature
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract For frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a bowl, mix grated carrots, sugars, and oil until well combined.
  • Add eggs and vanilla extract. Stir until smooth.
  • In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet mixture. Stir until just combined.
  • Pour the batter into the prepared cake pan.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

Frosting

  • Beat cream cheese and butter together until creamy.
  • Gradually add powdered sugar and vanilla extract. Mix until smooth.
  • Once the cake is completely cooled, spread the frosting evenly on top.

Notes

Serve chilled or at room temperature. Great with coffee or tea. Keep in an airtight container in the fridge for up to a week. It can also be frozen for up to three months.
