Ingredients
  

For the Marinade

  • 1/2 cup bourbon Feel free to substitute with whiskey.
  • 1/4 cup soy sauce Use tamari for a gluten-free version.
  • 1/4 cup brown sugar Can substitute with honey or maple syrup.
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons olive oil Can be replaced with vegetable or canola oil.
  • Salt and pepper to taste

For the Chicken

  • 1 lb chicken breast Bring to room temperature before grilling.
  • Green onions for garnish

Preparation

  • In a medium bowl, mix together bourbon, soy sauce, brown sugar, minced garlic, ginger, and olive oil until thoroughly combined—about 1 minute.
  • Add the chicken breast to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes.

Grilling

  • Preheat your Blackstone griddle to medium-high heat (about 375°F).
  • Remove the chicken from the marinade, allowing any excess to drip off. Season both sides with salt and pepper.
  • Grill the chicken on the griddle for 6-8 minutes on each side or until the chicken is thoroughly cooked (internal temperature of 165°F).
  • Once cooked, remove the chicken from heat and let it rest for about 5 minutes.
  • Slice the chicken against the grain, garnish with chopped green onions, and serve.

Notes

For an even deeper flavor, marinate the chicken for 2-3 hours. Serve with steamed rice, grilled veggies, or a fresh salad. Leftovers can be stored in an airtight container for 3-4 days.
