Ingredients
  

Bread and Fruit

  • 16 ounces brioche bread Use day-old for better absorption
  • 2 cups fresh or frozen blueberries

Egg Mixture

  • 1 tablespoon lemon zest
  • 2/3 cup light brown sugar Increase for a sweeter casserole
  • 8 large eggs
  • 1 cup whole milk Substitute half with heavy cream for creamier texture
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 tablespoon pure vanilla extract
  • 1 pinch salt

Instructions
 

Preparation

  • Spray a 9x13 inch baking pan with nonstick cooking spray.
  • Slice the brioche bread into 1-inch cubes. Spread half of the bread cubes in the bottom of the prepared baking dish. Sprinkle half of the blueberries on top.
  • Top with the remaining bread cubes and finish with the rest of the blueberries, distributing evenly.
  • In a large bowl, combine the lemon zest and brown sugar, rubbing the zest into the sugar until well combined.
  • Add the eggs, milk, melted butter, vanilla, and salt to the bowl. Whisk until well combined.
  • Pour the egg mixture evenly over the bread and blueberries. Cover with foil and refrigerate for at least 4 hours or overnight.

Baking

  • Preheat the oven to 350 degrees Fahrenheit. Remove the pan from the refrigerator and allow it to sit at room temperature while the oven preheats.
  • Bake covered for 45 minutes. Remove the foil and continue baking uncovered for another 10-15 minutes or until the French toast is puffed and the custard is cooked through.

Serving

  • Serve warm from the oven. Drizzle with maple syrup or sprinkle powdered sugar on top.
  • Pair with fresh fruit or whipped cream for an extra treat.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to three days. Reheat individual portions in the microwave or warm the entire casserole in the oven at a low temperature until heated through. Add spices like cinnamon or nutmeg to the egg mixture for extra flavor. Make a streusel topping with oats and butter for added crunch.
