Ingredients
  

For the blueberry compote

  • 1/2 cup blueberries Fresh or frozen blueberries can be used.
  • 2 tbsp honey or maple syrup Adjust sweetness to taste.
  • 1 tsp lemon juice Adds a tangy flavor.
  • 1/2 tsp cornstarch (optional) Use to thicken the mixture if desired.

For the yogurt base

  • 1 cup Greek yogurt Regular yogurt can be substituted for a lighter version.
  • 1 tsp vanilla extract Adds flavor to the yogurt.

Preparation

  • In a small saucepan, combine blueberries, honey, and lemon juice over medium heat and simmer for 5 minutes until blueberries soften.
  • If using, dissolve cornstarch in a small amount of water and stir into the blueberry mixture to thicken. Remove from heat and cool completely.
  • In a bowl, mix Greek yogurt and vanilla extract until smooth. Taste and adjust sweetness with more honey or maple syrup if desired.

Assembly

  • Spoon yogurt into silicone molds or mini muffin tins, filling about three-quarters full.
  • Add a spoonful of cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick to create a marbled effect.
  • Freeze molds for at least 3 hours until solid.

Serving

  • Remove frozen bites from molds and store in an airtight container in the freezer. Let sit for 2–3 minutes before eating for best texture.

Notes

Store the frozen yogurt bites in an airtight container in the freezer for up to a month. They can be served straight from the freezer or paired with fresh fruits or granola.
