Cookie Layer

  • 1/2 cup unsalted butter Remaining butter for cookie mixture.
  • 1/2 cup granulated sugar Offers classic cookie sweetness.
  • 1 large egg Second egg for the cookie layer.
  • 1 cup all-purpose flour The backbone of both layers; keep it spooned and leveled for accuracy.
  • 1/2 teaspoon baking soda Provides a lovely lift to the cookie layer.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a medium bowl, cream together the unsalted butter and brown sugar until smooth and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  • Gradually blend the dry ingredients into the wet mixture until well combined, being careful not to overmix.
  • Stir in the chocolate chips until evenly distributed.

Layering

  • Pour half of the brownie batter into the prepared pan and spread gently.
  • In a separate bowl, cream together the remaining butter and granulated sugar.
  • Beat in the egg and vanilla extract for the cookie layer, then mix in the flour, baking soda, and salt until just combined.
  • Spread the cookie dough over the brownie batter evenly.
  • Drop spoonfuls of the remaining brownie batter over the cookie layer.
  • Gently swirl the two batters together to create marbled patterns.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Let the Brookies cool before cutting into squares.
