  • 2 pieces boneless chicken breasts
  • 1 cup fresh pineapple, diced Use fresh for the best flavor.
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar Can substitute with apple cider vinegar or white vinegar.
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Preparation

  • In a bowl, mix together brown sugar, soy sauce, rice vinegar, garlic, and ginger.
  • Season chicken breasts with salt and pepper.

Cooking

  • Heat olive oil in a skillet over medium heat and add chicken. Cook until golden brown, about 5-7 minutes on each side.
  • Pour the pineapple mixture over the chicken and add the diced pineapple.
  • Cover and simmer for 15-20 minutes until the chicken is cooked through.
  • Serve hot, garnished with additional pineapple if desired.

Notes

Serve with steamed rice or quinoa. It can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove over low heat until heated through. Consider adding crushed red pepper flakes for a spicier dish.
