Ingredients
  

Main Ingredients

  • 1 pound ground beef Can use ground turkey or chicken as an alternative.
  • 1 can black beans, drained and rinsed Can substitute with pinto beans or kidney beans.
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning Make sure it is gluten-free if necessary.
  • 6 pieces tortillas, cut into strips Use gluten-free tortillas for a gluten-free option.
  • 1 cup corn (optional) Can be omitted if not preferred.
  • to taste salt and pepper Adjust according to preference.
  • as needed sour cream and green onions for topping (optional) These can enhance the flavors.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat for about 5-7 minutes, stirring occasionally until it’s no longer pink. Drain any excess fat.
  • Add the drained black beans, diced tomatoes, taco seasoning, and corn (if using) to the skillet. Season with salt and pepper to taste. Stir well and heat through for another 3-4 minutes.

Assembly

  • In a greased 9x13 inch baking dish, layer half of the tortilla strips on the bottom.
  • Spread half of the beef and bean mixture over the tortillas, followed by a generous layer of cheese.
  • Repeat the process with the remaining tortillas, beef mixture, and top with the rest of the cheese.

Baking

  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  • Allow it to cool for about 5 minutes before serving.

Notes

Serve hot from the oven, optionally topped with sour cream and sliced green onions. For variations, use different proteins or a combination of vegetables.
