  • 1 cup unsalted butter, softened Make sure butter is soft but not melted.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs Can substitute with unsweetened applesauce or flaxseed meal mixture.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Reduce or omit if using salted butter.
  • 1 cup toasted pecans, chopped Toasting the pecans enhances their flavor.

Instructions
 

Preparation and Mixing

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually blend the dry ingredients into the wet mixture.
  • Fold in the chopped pecans.

Baking

  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until the edges are golden.
  • Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Serve warm or at room temperature. Pair with vanilla ice cream or whipped cream for an extra treat. Store in an airtight container at room temperature for up to one week, or freeze for up to three months.
