  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans Consider toasting for extra flavor.
  • 1 cup chocolate chips (optional) Can be replaced with other types of chocolate.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients.
  • Stir in the chopped pecans and chocolate chips if using.
  • Drop tablespoonfuls of dough onto ungreased cookie sheets.

Baking

  • Bake for 10 to 12 minutes or until the edges are lightly brown.
  • Allow to cool on the cookie sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze in a freezer-safe container for longer storage. You can create ice cream sandwiches by adding a scoop of ice cream between two cookies.
