  • 2 teaspoons olive oil For sautéing
  • 1 pound ground beef Can substitute with ground turkey or chicken
  • 1 medium onion, finely diced
  • 2 teaspoons minced garlic
  • 4 cups coarsely chopped green cabbage Fresh or thawed frozen
  • 2 medium carrots, peeled, quartered, and sliced
  • 4 cups beef broth Can substitute with vegetable broth for vegetarian option
  • 3 cans (8 ounce) tomato sauce
  • 1/2 cup uncooked long grain rice
  • 1 leaf bay leaf Remove before serving
  • 3 tablespoons brown sugar Adds sweetness
  • 2 tablespoons parsley For garnish

Cooking

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the ground beef and season with salt and pepper. Cook until browned, about 4-5 minutes.
  • Add the onion and garlic, cooking for 2-3 minutes until softened.
  • Add the cabbage, carrots, beef broth, tomato sauce, rice, bay leaf, and brown sugar. Season with salt and pepper to taste.
  • Bring to a simmer and cook for 25 minutes or until the rice is tender.
  • Remove the bay leaf and discard it.
  • Sprinkle with parsley and serve hot.

Notes

Serve with crusty bread or a side salad. For a spicier kick, add red pepper flakes or hot sauce. Customize with other vegetables like bell peppers or zucchini.
