Ingredients
  

Vegetables and Aromatics

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 small head of cabbage, chopped

Meat and Broth

  • 1 pound ground beef or turkey
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups vegetable or chicken broth

Grains and Seasonings

  • 1 cup uncooked rice (optional) For a heartier soup
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt to taste salt
  • Pepper to taste pepper

Instructions
 

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat. Sauté the chopped onion for about 5-7 minutes, stirring occasionally, until softened and translucent.
  • Add the minced garlic and continue cooking for another 1-2 minutes, until fragrant.

Cooking

  • Add the ground beef or turkey to the pot. Cook for about 7-10 minutes, breaking it apart with a spoon, until browned and finely cooked through.
  • Stir in the diced tomatoes, tomato sauce, and broth. Bring the mixture to a gentle boil while mixing thoroughly.
  • Add the chopped cabbage and the uncooked rice, if desired. Along with the oregano, paprika, salt, and pepper, mix everything together well.
  • Allow the soup to reach a boil again before reducing the heat to low. Let it simmer for approximately 30 minutes, stirring occasionally, until the cabbage is tender.
  • Before serving, taste the soup and adjust the seasonings as needed.

Notes

Serve hot with a sprinkle of fresh herbs or grated cheese. Pair with crusty bread or a fresh garden salad. Can be stored in the fridge for 3-4 days or frozen for up to 3 months.
