  • 6 large large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon lemon juice
  • salt and pepper to taste
  • 8 oz cooked shrimp, chopped
  • Chives, for garnish

Preparation

  • Hard boil the eggs by placing them in a pot of boiling water for about 10 minutes. Remove and let cool.
  • Once cooled, peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a bowl.
  • Mash the yolks and mix in the mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, salt, and pepper until smooth.
  • Fold in the chopped shrimp until well combined.
  • Spoon or pipe the mixture back into the egg whites.
  • Garnish with chives and serve chilled.

Notes

To store leftovers, place the deviled eggs in an airtight container in the refrigerator. They can stay fresh for up to two days. Cover with plastic wrap if using a plate.
