Main Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 can white beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups corn, frozen or canned
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
  • Add sliced andouille sausage and cook until browned.
  • Stir in shredded chicken, shrimp, chicken broth, white beans, corn, Cajun seasoning, salt, and pepper.

Cooking

  • Bring to a boil, then reduce heat and simmer for 20 minutes.

Serving

  • Serve hot, topped with sour cream, cilantro, and avocado if desired.

Notes

To store leftovers, let the chili cool completely. Transfer to an airtight container and keep in the refrigerator for up to 3-4 days, or freeze for up to 2-3 months. Reheat on the stove or in the microwave, adding a bit of water or broth if thickened.
