Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the ricotta cheese, powdered sugar, vanilla extract, and cinnamon until smooth.
  • In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Crack in the egg and mix until combined.
  • In a separate bowl, combine the flour and baking powder, then gradually mix into the butter mixture until combined.
  • Roll small balls of dough (about 1 inch in diameter) and make an indentation in each ball with your thumb.

Baking

  • Spoon the ricotta mixture into each indentation.
  • Place cookies on a baking sheet and bake for 12-15 minutes until lightly golden.
  • After cooling, garnish with chocolate chips.
