  • 2 tablespoons butter or olive oil
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon salt, divided
  • 1 clove garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup sour cream or mayonnaise
  • 2 cups Gruyere cheese, shredded Reserve 1/2 cup for topping
  • 1/4 cup Parmesan cheese, grated (optional) For topping
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme Plus more for garnish

Preparation

  • Heat butter in a large skillet over medium-low heat.
  • Add sliced onions and 1/2 teaspoon salt. Cook slowly, stirring occasionally, for 30-35 minutes until golden brown and jammy.
  • Add garlic and cook for 1-2 minutes. Remove from heat and let cool slightly.
  • In a mixing bowl, combine softened cream cheese, sour cream, and 1 1/2 cups of Gruyere. Stir until smooth.
  • Fold in the caramelized onions, thyme, remaining 1/2 teaspoon salt, and black pepper.
  • Transfer the mixture into a greased baking dish. Sprinkle with reserved Gruyere and Parmesan (if using).

Baking

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 20-25 minutes, until hot and bubbly with a golden top.
  • Garnish with fresh thyme or parsley. Serve warm with bread, crackers, chips, or vegetables.

Notes

Take your time caramelizing the onions. Cooking them slowly helps to develop their natural sweetness. For an added flavor boost, consider adding a splash of white wine or balsamic vinegar when the onions are nearly done. Ensure the cream cheese is softened; this will help it mix more easily with the other ingredients.
