  • 5 pcs large onions, thinly sliced Sweet, large onions are preferred for their flavor.
  • 3 tbsp olive oil For sautéing the onions.
  • 180 g vegan cream cheese or regular cream cheese Can be substituted based on dietary preference.
  • 50 g vegan parmesan cheese or regular parmesan cheese Add for extra cheesiness.
  • Salt and black pepper, to taste Season to your preference.
  • 1/2 cup pasta water Used to adjust the creaminess of the sauce.
  • 400 g cooked pasta Any type of pasta can be used.
  • Fresh parsley, chopped, for garnishing Adds freshness to the dish.
  • Chili oil, for drizzling Optional, for a spicy kick.

Instructions
 

Cooking Onions

  • Heat the olive oil in a large pan over medium-low heat.
  • Add the sliced onions and a pinch of salt.
  • Cook, stirring occasionally, for 30–40 minutes until deeply golden and caramelized.

Combining Ingredients

  • Transfer the caramelized onions to a large mixing bowl.
  • Add the cream cheese, Parmesan, a generous amount of black pepper, and pasta water.
  • Stir until well combined and creamy.

Finishing Touches

  • Return the mixture to the pan over low heat.
  • Add the cooked pasta and toss until everything is well coated and heated through.
  • Plate the pasta, then garnish with chopped parsley and a drizzle of chili oil.

Notes

To store leftovers, let them cool completely, place in an airtight container in the fridge for up to 3 days. Reheat with a splash of water. For best flavor, take your time caramelizing the onions. Add garlic or herbs for extra flavor.
