Ingredients
  

For the Carrot Cake

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs bring to room temperature for easier mixing
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

For the Cream Cheese Mixture

  • 8 oz cream cheese bring to room temperature for easier mixing
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  • In a large bowl, whisk together grated carrots, flour, granulated sugar, brown sugar, vegetable oil, eggs, baking powder, baking soda, cinnamon, and salt until well combined.
  • In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth and creamy.

Layering and Baking

  • Pour half of the carrot cake batter into the prepared baking pan and spread evenly.
  • Drop spoonfuls of the cream cheese mixture over the batter and pour the remaining carrot cake batter on top, swirling gently with a knife.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.

Cooling and Serving

  • Allow to cool in the pan for about 10-15 minutes before cutting into bars.
  • Serve warm or at room temperature, optionally drizzled with additional cream cheese frosting.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months. Bring to room temperature before serving.
