Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, whisk eggs, brown sugar, granulated sugar, oil, and vanilla until smooth.
  • Gradually add dry ingredients to wet mixture, stirring gently until just combined.
  • Fold in shredded carrots, crushed pineapple (if using), and chopped nuts.

Baking

  • Pour batter into the prepared pan and spread evenly.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Making the Frosting

  • Beat together cream cheese and butter until smooth.
  • Gradually add powdered sugar, one cup at a time, beating well after each addition.
  • Mix in vanilla and a pinch of salt.

Assembling

  • Once bars are cool, spread frosting evenly on top.

Notes

For a lighter version, substitute applesauce for oil and use whole wheat flour.
