  • 8 oz cream cheese, softened Make sure the cream cheese is softened for easier mixing.
  • 1 cup shredded cheddar cheese Feel free to use different kinds of cheese for varied flavors.
  • 1 cup shredded carrots
  • 1/2 cup chopped nuts (like walnuts or pecans) Replace with seeds if you have nut allergies.
  • 1/4 cup green onions, chopped
  • 1 tsp garlic powder Adjust spices to suit your taste.
  • 1 tsp onion powder
  • to taste Salt and pepper
  • Fresh parsley for garnish Garnish before serving.

Preparation and Mixing

  • In a large bowl, mix the softened cream cheese and shredded cheddar cheese until smooth.
  • Add in the shredded carrots, chopped nuts, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Shaping and Refrigeration

  • Shape the mixture into a ball or oval shape.
  • Roll the cheeseball in extra chopped nuts to cover the outside completely.
  • Wrap the cheeseball in plastic wrap and refrigerate for at least 2 hours to firm up.
  • Before serving, take it out of the refrigerator and let it sit for about 15 minutes.
  • Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Reshape if it becomes too soft before serving. This cheeseball pairs wonderfully with a variety of crackers, fresh veggies, or sliced baguette.
