Ingredients
  

Meat and Veggies

  • 1.5 pounds Lean Ground Beef Use lean ground beef for a healthier option.
  • 1 each Red Bell Pepper, seeded and chopped
  • 1 each Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix

Biscuit Base

  • 2.5 cups Biscuit Mix, like Bisquick Can substitute with whole wheat biscuit mix for a lighter option.
  • 1 cup Water
  • 1 spray Cooking Spray, like Pam For greasing the casserole dish.

Toppings

  • 0.5 cup Sour Cream
  • 0.5 cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1.5 cups Cheddar Cheese, Fiesta Blend, shredded, divided Reserve ¾ cup for mixing.
  • 1 teaspoon Garlic Powder
  • 0.5 cup Salsa, mild Use spicy salsa for a kick.

Instructions
 

Preparation

  • Preheat the oven to 350℉.
  • In a large skillet over medium-high heat, cook the ground beef until there is no pink left. Drain excess fat.
  • In a mixing bowl, combine the biscuit mix with water. Mix until well blended, ideally using your hands.
  • Spray a 9 x 13″ casserole dish with cooking spray and spread the dough out to the edges. Bake for 5-8 minutes or until set and lightly golden. Set aside.

Cooking

  • Add chopped onions and red bell pepper to the cooked ground beef. Cook for about 4 minutes.
  • Stir in taco seasoning and mix well. Remove from heat.

Assembly

  • Spread the ground beef mixture evenly over the baked biscuit layer.
  • In a medium bowl, mix sour cream, mayonnaise, drained green chiles, ¾ cup cheese, and garlic powder until smooth. Spread over the ground beef layer.
  • Dot small spoonfuls of salsa over the sour cream layer and sprinkle the remaining cheese on top.

Baking

  • Bake uncovered in the preheated oven for 30 minutes or until hot and bubbly.

Notes

Customize with additional vegetables like corn or black beans. For a healthier alternative, substitute ground turkey for beef. Leftovers can be stored for 3-4 days in the fridge or frozen for up to 3 months.
