Ingredients
  

For the Quesadillas

  • 2 pieces tortillas Use flour or corn tortillas as preferred.
  • 1 cup cooked steak, sliced Use leftover or freshly cooked steak.
  • 1 cup shredded cheese Cheddar or pepper jack work well.
  • 1/2 cup bell peppers, sliced Any color bell pepper works.
  • 1/2 cup onions, sliced Yellow or white onions are ideal.
  • 2 tablespoons olive oil For sautéing vegetables.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Heat olive oil in a skillet over medium heat until shimmering.
  • Add sliced onions and bell peppers, and sauté until soft, about 5-7 minutes, stirring every two minutes.
  • Stir in cooked steak and heat through for 2-3 minutes. Season with salt and pepper.

Cooking

  • In another skillet, place one tortilla and layer half the cheese on one side.
  • Top with the steak mixture and the remaining cheese. Fold the tortilla over gently.
  • Cook until golden brown on both sides and cheese is melted, about 3-4 minutes per side.
  • Slice into wedges and serve hot.

Notes

For a better presentation, serve with guacamole, salsa, or sour cream. Pair with a cold beer or iced tea.
