  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 cup diced bacon Crispy bacon adds a delicious crunch.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth For richer flavor, blend with chicken broth.
  • 2 cups potatoes, diced Use any type of potatoes you prefer.
  • 1 cup carrots, diced
  • 1 cup milk For creaminess.
  • 1 cup shredded cheddar cheese Feel free to use any favorite cheese.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese For added creaminess and richness.
  • Salt and pepper to taste

Optional Toppings

  • diced pickles Adds tanginess.
  • mustard For extra flavor.
  • ketchup Enhances the cheeseburger flavor.

Instructions
 

Preparation

  • In a large pot, cook the bacon until crispy. Remove and set aside.
  • In the same pot, brown the ground beef and drain excess fat.
  • Add the onion and garlic, cooking until softened.

Cooking

  • Stir in the beef broth, potatoes, and carrots. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15-20 minutes.
  • Lower the heat and stir in the milk and cream cheese until melted and combined.
  • Add the cheeses and stir until melted.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with crispy bacon and any additional toppings.

Notes

Cheeseburger Soup is great for meal prep. Can be stored in the fridge for 3-4 days or frozen for up to 3 months. Reheat on the stove or microwave.
