Ingredients
  

For the cones

  • 2 large russet potatoes Baked and then stuffed
  • 1 pound ground beef Can substitute with ground turkey or plant-based alternatives
  • 1/2 cup diced onion Cook until translucent
  • 1 cup shredded cheddar cheese Can substitute with pepper jack or mozzarella
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • to taste Salt and pepper
  • drizzle Olive oil For cooking
  • 4 Corn tortilla cones or waffle cones Choose based on preference

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the russet potatoes with a fork, then bake them in the oven for about 45 minutes or until they are tender when pierced with a fork.
  • While the potatoes are baking, heat a drizzle of olive oil in a skillet over medium heat.
  • Add the diced onion and cook until translucent, about 5-7 minutes.
  • Add the ground beef to the skillet, season generously with salt and pepper, and cook until browned, about 7-10 minutes. Drain any excess fat.
  • Stir in the ketchup and mustard, cooking for an additional 2 minutes until bubbling at the edges.

Assembly and Baking

  • Once the potatoes are baked and cool enough to handle, scoop out the insides into a mixing bowl.
  • Mash the potato flesh and mix it with the ground beef mixture and shredded cheese until well combined.
  • Fill the corn or waffle cones with the potato and beef mixture, being careful not to overfill.
  • Place the filled cones on a baking sheet and return to the oven for another 10-15 minutes, until the cheese is melted and the cones are crispy.

Notes

These cones can be made ahead and stored. Ideal with sides like fries or salad. Add garnishes for extra flavor!
