  • 1.5 pounds large fresh strawberries Select ripe, fresh strawberries for the best flavor.
  • 1 tablespoon lemon juice Optional

Cheesecake Filling

  • 8 ounces cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 0.5 cup whipped topping or heavy cream, whipped You can use store-bought whipped topping.

Optional Toppings

  • Crushed graham crackers Optional topping
  • Mini chocolate chips Optional topping
  • Fresh mint leaves To elevate presentation
  • Lemon zest Optional topping

Preparation

  • Wash, dry, and halve strawberries lengthwise. Remove stems and hollow out centers gently.

Make Filling

  • Beat cream cheese until smooth.
  • Add powdered sugar and vanilla, then fold in whipped topping until light.

Fill Strawberries

  • Pipe or spoon cheesecake filling into strawberry halves.

Add Toppings

  • Sprinkle with graham crumbs, chocolate chips, or lemon zest if desired.

Chill and Serve

  • Refrigerate for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator. Best enjoyed within 1-2 days. Avoid freezing as strawberries may become mushy.
