  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1 cup salsa
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Preparation

  • In a bowl, mix together the shredded chicken, cream cheese, salsa, chopped spinach, and shredded cheese until the mixture is thoroughly combined.
  • Take a few tablespoons of the mixture and place it onto each tortilla. Roll them up tightly, ensuring the filling stays inside. Don’t overfill to avoid leaks when frying.
  • Heat oil in a skillet over medium heat. Test the oil with a small droplet of water; it should sizzle if hot enough.

Cooking

  • Fry the taquitos until they are golden brown and crispy, about 2-3 minutes on each side.
  • Carefully remove the taquitos from the oil and drain them on paper towels to absorb excess oil.

Serving

  • Serve them hot, paired with extra salsa or your favorite dipping sauce.

Notes

Best enjoyed hot and fresh. Can be served with various dipping sauces. Store leftovers in an airtight container for up to three days. Freeze un-fried taquitos for up to three months. Reheat in oven to restore crispiness.
